Mas des Colibris
A 12-hectare pocket of vineyards set in unspoilt natural surroundings, Mas des Colibris combines outstanding terroir with well-suited grape varieties. The icing on the cake: the vines have been certified organic since 1999.
The Mas des Colibris adventure began in early 2013, with a crash course in winegrowing through total immersion. Once the necessary buildings were in place, the estate’s first vintage followed in 2015.

Soil: Clay-limestone soils.
Tasting notes: An intense nose with a hint of vanilla, marked by spice and herbs (pepper, thyme), followed by ripe and jammy red fruit.
The palate is beautifully full and rich, revealing spice and Morello cherry notes. The tannins are present yet well integrated. Supple, with a very long finish. Serve between 16 and 18°C. Ageing potential: 7–9 years.
Food pairings: This wine pairs beautifully with a tagine or leg of lamb with thyme.
